Cashews symbolize prosperity and plenty and thrive in foods along the southwestern coast of
India. Whole cashews are a kidney-shaped nut that grows out from the bottom of the cashew apple. Cashew nuts have a sweet, buttery flavor and contain about 48 percent fat. Their creamy and nutty taste complement both curries and sweet dishes. They can be ground into a creamy paste to thicken curries, or fried to garnish puddings and sweets. Roasted and salted cashews make a good snack.
