Chappli Kebab Mix- Shan
A mix for Peshawari style Spicy Ground Meat Patties.
Ingredients: salt, red chilli, coriander, cumin, ginger, garlic, dehydrated onion, pomegranate seeds, extra fine flour wheat/corn, black pepper, black cumin, cinnamon, mace, bay leaf, fenugreek leaves, cardamom, citric acid (E330).
1. In the minced meat add
Shan Chappli Kabab Mix, onion, green chillies, ginger, garlic, egg(s)
and 3 tablespoons ghee. Mix and knead to make smooth dough.
Leave it aside for 30 minutes. With wet hands make thin flat round
Kababs. Paste a slice of tomato on one side of the Kabab, and deep fry
in hot ghee/oil until crisp brown.
the above recipe take the following additional: 1 cup corn/chickpea
flour, ½ cup finely chopped chives/green onions and ½ cup diced
tomatoes. Mix all these with the ingredients of Chappli Kababs except
oil/ghee. Set aside for 20-30 minutes. Shape the Kababs in 3” long
cylindrical/oval shapes and deep fry until crisp brown.
Tips for Best Result:
For richer taste, add 100g minced beef bone marrow in the above ingredients.
